What you need:
~ 2 tbsp coconut flour
~ 30g peanut flour
~ 30g stevia or 2 tbsp sweetener
~ 3 tbsp oat fiber
~ ½ tsp cinnamon
~ A dash of salt
~ ½ tsp vanilla extract
~ 1 tbsp diary/sugar-free chocolate chips
1. Preheat your oven to 180°C (350°F). Combine all the dry ingredients (flour, stevia, oat fiber, cinnamon and salt) and mix with a fork.
2. Add 6 tbsp water and the vanilla extract and stirr until it’s a smooth dough. If it is too dry, add one or two more tablespoons of water. Add the chocolate chips and stirr again.
3. Form 8 cookies and put them on a baking tray (use a baking sheet of course). Let them bake for about 12 minutes.
